Zucchini Marinara

Marinara Ingredients:                                                                                                    Noodle Ingredients:

2 large tomatoes, seeded and chopped                                                                          6 medium zuccini, peeled and cut in three inch sections
1 red bell pepper
1 cup sun dried tomatoes, soaked 2 hours in warm water, drained and choped
1 tsp agave nectar or liquid sweetener(optional)
1/4 cup extra virgin olive oil
2 cloves of garlic, crushed
3/4 tsp salt, or to taste
A pinch of cayenne pepper
2 Tbsp minced fresh basil or 2 tsp dried
2 Tbsp minced fresh oregano or 2 tsp dried
 
 
 
 Process the Marinara ingredients, except the fresh herbs, in a food processor until well processed but still a little chunky. Add the herbs and process until mixed. Transform the zucchini into noodles using a vegetable peeler or spiral slicer. Toss the zucchini noodles with enough marinara to coat well and serve immediately. Serve with extra marinara sauce on the side.
