
You can use any crust and make the filling any flavor. All crust is two cups of dry nuts ( pre-soaked then dried) .Put nuts in the food processor with the s blade to a crumble. Add your dates-4-8 depending on how sweet or crumbly you want your crust. Press into pie pan. You can do pecans, or you can mix coconut, walnuts and dates mixture. Its hard to mess up a crust.
The Filling
2 cups cashews, soaked for a few hours
1/2 to 2/3 cup agave
1/3 cup lemon juice
1/3 cup coconut oil (melted)
1/2 cup of water
Blend all ingredients in the Food processor and pour into pie crust. Place in Fridge to set. enjoy the next day.
If you want flavors, add desired fruit on top by blending with a small amount of agave or blend into the cashew mix. Make sure you taste to check for sweetness.
Topping (strawberry, blueberry, mango etc....)
2 cups fresh berries of your choice
2-3 T agave or 3-4 dates, pitted
juice of 1/2 lemon
Blend until smooth - strain in a nut bag if you use rasberries or blackberries.
